Doing something nice for your boo on Valentine’s Day or any special occasion shouldn’t be complicated. Sometimes we make things a little more challenging than they should be. We want to ease the struggle for you! Here’s a pretty simple recipe that uses our Red Velvet Brownies. It’s a Strawberry Red Velvet Cheesecake Trifle that you can make ahead of time. And you don't have to feel so guilty because you are getting protein from the yogurt, Vitamin C from the strawberries and antioxidants from the dark chocolate!
Strawberry Red Velvet Cheesecake Trifle

1 box (12) of our Red Velvet Brownies, cut into 1 inch cubes
2 lbs strawberries, sliced lengthwise
2 – 8 oz. packages of cream cheese, softened
2 cups plain yogurt (can use organic)
1 cup powdered sugar (can use organic)
2 tsp vanilla bean paste or vanilla extract
1 – 4 oz. bar dark chocolate, curled with a vegetable peeler*
First, beat the cream cheese at medium speed for 1 minute using a hand mixer or a stand mixer. Once creamy add the yogurt, powdered sugar and vanilla bean paste or extract. Beat on medium speed for 2 mins or until smooth, making sure you scrape down the sides of the bowl as needed. Cover and chill for 30 mins.
Grab a trifle dish or glasses to assemble the trifle. Arrange a third of the brownie cubes at the bottom of the dish or glass. Next, layer a third of the cream mixture on top. Then sprinkle the dark chocolate curls on top of the cream. Add a layer of strawberries. Repeat these layers 2 more times, ending with a dollop of cream and a sprinkle of chocolate. Cover and chill for 1 hour before serving.
*Tip: Place your dark chocolate bar in the freezer for at least 15 mins before you grate it with the vegetable peeler. The curls do not have to be perfect. The rustic look is actually a nice touch. ;-)
You can always cut the recipe in half or thirds, whichever works best for you. You can even use whatever fruit you would like! Just make sure you have some fun and don’t break a sweat trying to impress your loved one. They appreciate you for all that you do already!
